As what I understand you cant hear anything on your iPhone when you calls out or someone calls in unless you turn the loud speaker on. The fact that it works fine when loud speaker is on, that tells us that there is nothing wrong with its software and it is more on hardware issue. Base on the error that you are getting when you pressed on the volume button it recognizes headphones even there is no headphones connected. It seems like there is something inside the headphone jack that shorted some of its circuitry (it might got wet inside or a small piece of inductive object like metal might accidentally inserted). I would not suggest to try fixing that thing cause it might void its' warranty if there is. Rather go to Apple store or repair center and have them do it for you.
